Went to pickup the farm share today, so more investigation into what they had available:
Endive / escarole (listed on the website as moderate usage): ratio of 1.87, also has potassium and manganese, kind of average in terms of vit A and K in relation to the others. This has a better ratio than red and green leaf, so I wonder what makes it "moderate" usage as opposed to staples like red and green leaf?
They didn't have turnip greens, but one of the farmers said that arugula is closely related. Arugula is bitter though, and in the past Sedge has turned up his nose. But anyway, the ratio is high at 3.07. Nothing else jumps out about arugula to me.
Update: Sedge was happy to eat a bit of both arugula and escarole this time
