I would think that once a week or every other week would be fine, but don't offer any other protein (pellets) on the day that you give them the treat. Variety is great, but you have to be careful not to overdo it on the protein. Since protien is harder to get than vegetable matter in the wild they are genetically programmed to prefer it. Keep offering the veggies, try varying what you offer as well as how you offer it. My turtle wouldn't eat lettuce until i used a veggie clip to stick it to the side of the tank. With other vegetables, try shaving them into thin strips with a vegetable peeler or shredding them with a coarse cheese grater. Eventually you'll get them started and they'll grow to love their vegetables. Just don't give up on it, it's really important for their long term health and happiness.
