First, cut out all of the treats and feed only pellets (1/2 "head-sized" amount) daily. That should assist in the obesity. The other things like meat, shrimp, and snails have way too much protein and should be given infrequently as a treat only.
As for greens, it's just one of those gotta keep trying things. You want to offer greens daily, even if they aren't eating them. Try out different types of greens, as I have found that my turtle loves the darker lettuces and will leave other lettuces alone.
Also, try a something yummier than lettuce to get them started, like carrot, apple, or mango strips. Cut them into strips so they resemble worms, sort of. These usually entice them and the flavor is sweet. You can also try strawberry slices or blueberries. Don't overfeed these either, as they'll lead to obesity too! Once you get them hooked on a variety of things, they may come around to lettuce.
