It will probably take him a while to warm up to veggies. How old is your turtle? Younger turtles tend to eat more meat than veggies, while the reverse is true for adults.

To entice eating, you can try soaking the leaves in some tuna juice.

What kind of veggies are you offering to him? You can try offering some aquatic plants, they can stay in your tank even if your turtle won't touch them.

The aquatic plants that the babies LOVE is called "anacharis" and it is easy to find at any pet store that sells fish. Just ask for it. They love to eat it & shred it, but you won't have to clean it up. They will eat it all eventually even if it is all messy in the tank. :)

If you decide to get an aquatic plant, make sure you rinse off all of the little snails. They can become a real problem if they're allowed to reproduce.

ya my turtle use to attack the small snails and eat them. but usually they fill the tank and trail their slime allover the tank but it gets rid of the algaae thoguh. but my turtles only eat the big ones which isnt really good for them since they tend to fight over them
