Its not all that important if they dot eat veggies I only give veggies as a treat. The pellets have everything they need to live. You can try not feeding pellets for a few days and put just veggies they usually come around to what ever your putting in the tank. Young turtles also dont like veggies and tend to like meat like shrimp or tuna.

Dont feed the Tuna or Shrimp on a daily basis. Some people give it once a month because of how much protein it has.

Contrary to vtolds account, it is important for RES to have a variety of vegetables as a staple in their diet.
Pellets are healthy, but they are not completely nutritionally balanced and that's why you need to feed veggies as well.
Look at the top of the nutrition section for sticky notes on which veggies to feed and which to avoid.
You can try bribing your RES to eat the veggies by dipping them in tuna juice, or you can try a tough love approach and only offer veggies until your turtle decides to eat them.

I didn't say that I said Pellets have everything they need to live which they do, Veggies are really just to give them the roughage and Vitamins they may not get from pellets alone.

And because turtles need a balanced diet to be healthy, they need vegetables. You could survive by eating just cheetos, but you wouldn't be healthy.
