My res has never liked greens but she loves carrots and bell peppers (basically anything brightly colored). I've read that too many carrots can be bad because it can cause vitamin A toxicity, but are those decent replacements for greens or should I keep trying to get her to eat lettuce?

My turtles also love carrot slices. My res will eat anything but my map will not eat any kind of lettuce. And my dbt's eat only pellets and seafood.

I would say keep trying lettuce. Never know when it might try them. Took mine a while but she can't get enough now!

Here's what I do: I buy salad mix (I think it has about a half-dozen different lettuces in it) and I grab one in the morning for feeding. At the end of the day most of it is gone (unless it's red-leaf lettuce... that one doesn't seem to be all that appealing). Then I pellet-feed. When I'm cleaning the tank after that I take out any lettuce remains. Rinse and repeat. Every so often (every couple of weeks) it's something else instead of lettuce. I eat a lot of fruit and veggies so I mostly just raid my fridge for whatever is easily shared.

But then, I'm new at this, so, I could be doing it wrong. And I'm feeding an adult, so he should likely be eating more veggies than this anyway.
