I'm not sure how dandelion leaves would hold up once frozen and then thawed. In comparison, I used to freeze the leaves from my mint plant in the herb garden so I could use them in hot tea later. When they were thawed they were just mush. It was fine because all I needed them for was tea, but if dandelion leaves thaw the same way they wouldn't be good for trying to eat.
