update:
Donatello has absolutely no problem taking food from my hand and after I fed her a couple of pellets yesterday, she took a couple bites of carrot.
Today, however, she would have nothing to do with the carrots, but after 30 minutes of consistently ignoring the veggies in her water, I got her to bite a green bean. She couldn't bite off a piece though! She tried taking 3 bites and would get a tiny little bit after shaking her head furiously with me holding the green bean in place for her. I ended up steaming a green bean and broke it in half but she didn't want to eat it because of her previous failures. i ended up putting a pellet in the water and when she would go for the pellet, I would stick the bean in front of her and she'd get a bite of both. After getting a bite of both, I was able to get her to eat more of the green bean--probably 1/4 total.
Are steamed veggies bad for her? I know raw veggies have a lot more nutrients than cooked but she literally couldn't bite through it. She also has trouble biting pellets and has to wait a few minutes after I put it in before she'll take a bite.

To recap since this was so long: She has no problems with me handfeeding her but she's still very anti-veggie. I can't wait to get to a petstore on Monday.

My turtle would eat fresh basil before he'd eat any other veggie. It's still his favorite. Steaming the hard veggies is good - makes it easier for a little turtle to bite.

I was actually wondering if you could give turtles fresh herbs like basil and cilantro. Just out of curiosity because I have them around fairly often.

Steamed veggies are not necessarily bad for them. Sheba won't touch carrots unless they are soft & steamed (easy to eat, I guess!).

My turtles occasionally like basil, I've never given cilantro, but I think another member has posted that they have.

Lightly steaming veggies containing Vit A (carrots, pumpkin, etc.) actually makes the vitamin more available for use by the body.
