Moss would be the easiest option. Just put some Java moss in my tank and my turtle doesnt seem interested in eating it all at once, which is great considering anything else they have killed. Java Fern is nice as well. Pretty easy to grow plants.
I just read your previous post on plant light, you just have to make sure you keep the right spectrum of light. I like 6500k and 10000k Lighting, Red and purple is good for plants. generally people say 2-3Watts per gallon in the tank but that's for full stocked planted tank. Getting a 6500K white LED bulb and put it in a clip on light should be more than enough for some plants.
It would be fully submerged. I think I want to try some Java moss. They had it at petsmart for eight dollars. Do you think I could find it on amazon though?

Also, its day two, and nemo hasn't basked at all, and the water is still pretty cloudy. Will it just take time?

I figured out the only lamp I have is the Halogen heat bulb. I think that's UVA?
So I need a UVB one?
The bulb I have now gives off a ton of heat.
